La storia della Guinnes

The History of Guinness: From Legend to the Perfect Pint

Few beers in the world have a history as fascinating as that of Guinness. An almost black color, a creamy head that seems to defy gravity, and a legend that has endured for over 250 years.

Here’s the true story of Guinness, how to tell when it’s been poured just right, and where you can really enjoy it in Rome.

🍀 The Origins: Dublin, 1759

It all began on December 31, 1759, when Arthur Guinness signed a lease for the St. James’s Gate brewery in Dublin. Legend has it that the lease was for 9,000 years, at a rent of just 45 pounds a year.

That’s where one of the world’s most recognizable beers originated; today, it is brewed in over 50 countries and served in more than 120.

⚫ Why Guinness Is Different from Other Beers

Guinness isn’t as dark as it seems: when held up to the light, it’s actually a very dark ruby red. Its color and toasty flavor come from the roasted barley used in the recipe—the same technique used for coffee.

  • It’s a dry stout—not sweet like many people think
  • It has a lower alcohol content than you might expect, around 4.2%
  • The creamy head comes from nitrogen, not just CO2 as in classic beers
  • The famous “waterfall” effect in the glass is caused precisely by the nitrogen bubbles that sink before rising again

⏱️ How to Pour a Perfect Guinness

It’s no myth: Guinness should be poured in two stages, and it takes patience.

  • The glass is tilted at a 45-degree angle and filled to about three-quarters full
  • Let it sit until the foam has settled
  • Only then is the tap completed, straight down to the rim
  • The total time? About 119 and a half seconds—hence the famous slogan, “Good things come to those who wait.”

You can tell right away when a Guinness has been poured too quickly: it lacks a dense head, and the taste suffers as a result.
